Garlic scapes are the edible flower stalks of hardneck garlic plants. They grow from the base of the garlic bulb and curl upwards, resembling long, green, curly beans. Harvesting scapes is beneficial for the garlic plant as it encourages the bulb to grow larger and develop more flavor. Scapes can be used in cooking like garlic, but have a milder, slightly sweeter flavor.
